I'd like to have the system handle the following.

prices per person per day:
Jan-May: 39€
Jun: 41€
July: 52€
August: 60€
Sep: 41€
Oct-Dec: 39€

single room supplement: 11€

discount HB: 10%
discount BB: 20%
Discount 3rd-4th adult same room: 10%
Discount children 2-5 (in the same room with 2 adults): 50%
Discount children 6-11 (in the same room with 2 adults): 30%
Infants 0-2: 7€

What would be the best way to do this?

my suggestion is to create a rate for each (double 1 person, double 2 people, ect), then with assignment rule 4 you don't need to enter the number of people once you have selected the rate. For the discounts you can use the extra costs, as explained here:

A related question. I did as you suggested in your reply, set up rule 4, but now when I do quick availability check, the table show both singe rate and double rate available for 2 people. How to avoid that and show only double rate?

Newer versions of hoteldruid now support "per person" prices too, along with a fixed price.
