I don´t see a big difference between rooms and appartments. We use both for example. One possiblility could be to charge "extra persons" with extra costs, that means, you got a basic rate for a room with single occupancy and add a certain amount for extra people.

The Version of PhPMyadmin has nothing to do with the installation of PHPR.
You have to check your PHP-Version!!! And your MySql is ok anyhow.
And if it is not working, try the hosting service of Marco.

in the weekly prices the week is starting on sunday. Is there any possibility to change here the starting day of the week?
I found the possibility to determine that for the tables, but not for the weekly prices.

I cannot change the contract format. When I set it to RTF or EMAIL an press the "Change-Button" it is always reset to "HTML".
And if I "save changes" it doesn´t help anyhow.

Any idea about the possible mistake?
